The Perfect Vegan Apple Pancakes

Today I want to share with you a vegan apple pancake recipe. I have been making these nonstop lately… they are just too good! It is a very easy recipe that does not require many ingredients, is healthy, and delicious! The base consists of apples, giving them a bit of substance in lieu of traditional pancake recipes that calls for eggs. I also made a berry chia jam, and this too only requires a few ingredients. It is a lovely addition to the pancakes!
Vegan Pancakes:
*Makes about 10 small pancakes
1 apple- grated or finely chopped in a food processor
2 and 1/4 cups flour ( I used Einkorn flour, but any flour will do)
2 cups plant-based milk
1 tablespoon baking powder
1 tablespoon oil ( I like to use lemon oil to give it a bit of flavor)
Directions:
Chop apple into small pieces. Transfer to a food processor and pulse for a few seconds, until finely chopped. Then mix all ingredients together. Cook on medium/low heat for 5 minutes on each side, allowing them to be fully cooked. Top with the berry chia jam, maple syrup, or whatever else you would like, and enjoy!
Chia Berry Jam:
*Because it takes a few hours for the chia seeds to soak up the liquid of the cooked berries, please make this jam overnight or a few hours beforehand.
2 cups frozen berries
1 tablespoon lemon juice
1 tablespoon maple syrup
1/4 cup water
2 tablespoons chia seeds
Directions:
Mix all ingredients except the chia seeds in a small pot. Bring to a boil on medium heat, then cook for a few minutes until softened. Remove the berry mixture from heat and transfer to a heat-proof jar, stirring in the chia seeds. Place in the refrigerator and let it thicken for a few hours or overnight.
I topped mine with shredded coconut! Hope you enjoy these as much as I do 💜
